Mustard oil extraction can be done through both traditional and modern methods, each with its own set of advantages and disadvantages.

Traditional Methods:

  1. Cold Pressing: This method involves crushing the mustard seeds in a press to extract oil without the use of heat. The oil is collected by pressing the seeds mechanically, and then filtered to remove impurities. This process retains the natural flavor and nutrients of the oil.
  2. Ghani or Kolhu Pressing: In this method, mustard seeds are crushed using an ancient type of oil press called a "ghani" or "kolhu". This process is similar to cold pressing and is known for producing high-quality mustard oil with a strong flavor.

Modern Methods:

  1. Expeller Pressing: Expeller pressing involves using a mechanical press to squeeze out oil from the mustard seeds. The seeds are fed into the expeller, where they are crushed and pressed to extract oil. This method is more efficient than traditional methods and can yield higher quantities of oil.
  2. Solvent Extraction: In this method, mustard seeds are first crushed and then treated with a solvent such as hexane to extract the oil. The solvent is then removed through evaporation, leaving behind the oil. While solvent extraction is highly efficient, there are concerns about residual solvent traces in the oil and its potential impact on health.


  • Quality: Traditional methods often yield oil with a richer flavor and higher nutritional value due to minimal processing. Modern methods may sacrifice some flavor and nutrients for higher yield and efficiency.
  • Efficiency: Modern methods such as expeller pressing and solvent extraction are generally more efficient in terms of oil extraction yield and processing time compared to traditional methods.
  • Environmental Impact: Traditional methods are usually more environmentally friendly as they require minimal energy and use simple machinery. Modern methods may involve the use of chemicals and energy-intensive processes, leading to a higher environmental footprint.
  • Health Considerations: Cold pressing and traditional methods are often preferred for their perceived health benefits, as they retain more of the natural nutrients and antioxidants present in the mustard seeds. Solvent extraction, on the other hand, raises concerns about solvent residues in the oil.
